Rhubarb is easy to grow and there are rhubarb patches in backyards all over America hitting their stride right now. With the proper care, it can produce from April right through fall. Rhubarb is also one of the first crops available in the spring, which helps explain why there are so many beloved rhubarb recipes out there.

Rhubarb is often paired with sweet strawberries to balance out its famously tart taste but in these classic recipes rhubarb is the star. The flavor is sour if you try to eat it raw, but cooked rhubarb mellows out and has a berry-like flavor that so many of us (raising hand!) find irresistible.

FAQs

How do you reduce the rhubarb tartness? ›

Not only does rhubarb need sweetness to temper its tart flavor, the sugar helps break down the fibrous, stringy stalks. A good starting point is to use a scant 1 cup granulated sugar for 4 cups of chopped rhubarb.

How do you get the most Flavour out of rhubarb? ›

Removing the first layer of skin will take away its "rubbery taste" and bring out the stalk's most appealing flavors, and the brown sugar will temper the tartness.

Why is my rhubarb crisp soggy? ›

The rhubarb-strawberry mixture in this recipe releases liquid as it cooks, so you can expect this dessert to be nice and juicy, yet the buttery, crumbly topping crisps up to hold it all together. To avoid a soggy topping, bake the dish until the topping is golden brown and crisp.

What cancels out tartness? ›

How Do You Neutralize Sour Taste in Food? If a dish is too sour, add a little bit of sugar! Sweetness balances out sour flavors, so if something makes your mouth pucker, a dash of sugar may help soften the blow of the sour food.

How do you counteract tart taste? ›

Forced rhubarb is sweeter than the ordinary kind as it has less oxalic acid. The forced stems are also pinker because plants can't make the green pigment chlorophyll in the absence of sunlight, which makes for nicer-looking desserts.

What is the difference between rhubarb crisp and crumble? ›

So what's a crumble vs. a crisp? A crumble is just a crisp without oats in the streusel. It may feature nuts, but the streusel topping is usually a simple combination of butter, flour, and sugar that is more clumpy than that of a crisp.

What happens if you put too much butter in crumble? ›

If you use more butter than the recipe calls for, the crumb topping will be melted and greasy. If you don't use enough butter it will be dry and floury.

Why is my crumble topping not crumbly? ›

Often this happens if the crumb topping is over-mixed or if the butter was much too hot. Over-mixing will leave you with a pasty, batter-like mixture rather than the crumbly topping you are aiming for. Using very hot butter can cause the sugars to melt, leaving you with a greasy and not crumbly mixture.

Is it better to cut or twist rhubarb? ›

Depending on the variety, they may be only 12 inches long, or as long as two feet. To pick rhubarb, hold the stalk firmly, pull and twist. Do not use a knife to cut the stalks from the plant. When should you not pick rhubarb? ›

Rhubarb can be picked whenever it looks ripe (long stems, dark red in colour, streaked green with fully-unfurled leaves) until around august, when it's best to leave it to recover for next year. To harvest, just reach down the stem towards the base and give it a sharp tug upwards so it comes away.
