What You’ll Need for these No Bake Easter Cookies

  • Unsalted butter
  • Granulated sugar
  • Unsweetened cocoa powder
  • Milk
  • Vanilla extract
  • Creamy peanut butter
  • Quick oats – Because these cookies are no-bake, you want to make sure you use quick oats instead of rolled oats or steel-cut oats. Quick oats soften, whereas other varieties will remain tough in no-bake cookies.
  • Shredded coconut – Coconut adds a nice texture to the cookies and makes them look more like nests. If you don’t like coconut you can substitute another ½ cup of quick oats.
  • Egg-shaped candies – Use your favorite easter egg-shaped candies.

How to Make No Bake Birds Nest Cookies

Prep baking sheets. Line 2 baking sheets with silicone mats, wax paper or parchment paper.

Mix and heat. Combine the butter, sugar, unsweetened cocoa powder and milk in a large pot over medium heat. Stir frequently so the butter melts until it reaches a boil. Once it starts to boil, allow it to boil for 60 seconds, stirring once.

Finish cookie mixture. Remove the pot from the heat and stir in the vanilla extract and creamy peanut butter. Then stir in the quick oats and shredded coconut, fully coating.

Scoop cookies. Use a cookie scoop to drop spoonfuls of the mixture onto the baking sheet.

Create bird nests look. Press your thumb lightly into the middle of the released scoop to make a small indent. Now it should resemble a nest.

Cool cookies. Allow the cookies to set at room temperature for 20-30 minutes. To speed up the cooling process, you can place them in the fridge.

Top with candy Easter eggs. Top each nest with 2-3 candy eggs.

Substitutions & Variations

  • Change up the top of the cookies. Your Easter nest cookies can be topped with any candy you like that resembles an egg. You could try jelly beans, Cadbury mini eggs, chocolate candy eggs or any other egg-shaped candy.
  • No coconut. If you’re not a coconut fan, substitute the coconut for another 1/2 cup of quick oats.
  • Gluten Free No Bake Easter Cookies. To make this recipe gluten-free, simply select certified gluten-free quick oats.

Storage Tips

Store cookies in an airtight container at room temperature for up to one week. You can also freeze no bake Easter cookies in an airtight container for up to 1 month. Simply place in the refrigerator to defrost when ready to east.

Ingredients

  • ½ cup unsalted butter, 1 stick
  • 1 ¾ cups granulated sugar
  • ¼ cup unsweetened cocoa powder
  • cup milk
  • 1 tsp vanilla extract
  • ½ cup creamy peanut butter
  • 2 ½ cups quick oats
  • ½ cup shredded coconut
  • Egg-shaped candies

Instructions
