“This dish was on the menu in a little restaurant called La Gondola in one of the roughest parts of Palermo. I thought the combination of flavours was great, and very accessible to us back home in Britain. You can buy very high-quality frozen prawns in supermarkets these days (thaw before using), so it’s a win-win situation, but if you can get hold of some super-fresh ones and peel them yourself this can all of a sudden become very luxurious in flavour. A real crowd-pleaser. Finish off with good-quality olive oil and wild rocket full of flavour and you’ll be laughing. ”

  • bestes Olivenöl
  • 2 Knoblauchzehen, geschält und fein gehackt
  • 1–2 getrocknete rote Chilischoten, zerkrümelt
  • 400 g geschälte rohe Garnelen
  • 1 kleines Weinglas Weißwein
  • 2 gehäufte EL Tomatenmark von sonnengetrockneten Tomaten (Crema di pomodori secchi aus dem italienischen Feinkostladen) oder 6 sonnengetrocknete Tomaten, im Mixer püriert
  • abgeriebene Schale und Saft von 1 unbehandelten Zitrone
  • 2 Handvoll Rucola, grob gehackt

  1. In einem der wildesten Stadtteile Palermos besuchte ich ein kleines Restaurant namens La Gondola und fand auf seiner Speisekarte dieses Gericht. Mir gefiel die Kombination der Zutaten, und dass man sie selbst bei uns ohne großen Aufwand besorgen kann. Jeder Supermarkt führt inzwischen Tiefkühlgarnelen von sehr anständiger Qualität. Sollten Sie ganz frische Garnelen bekommen, die Sie sogar noch selbst schälen müssen, wird aus diesem Gericht plötzlich eine hochnoble Angelegenheit. Ein richtiges Geschmackswunder! Wenn Sie dann auch noch so richtig gutes Olivenöl darüberträufeln und vielleicht sogar wilde Rauke aufgetrieben haben, die besonders aromatisch ist, dann werden Sie endgültig abheben. P.S. Tiefkühlgarnelen müssen unbedingt komplett aufgetaut sein.
  2. Die Spaghetti in einem großen Topf in kochendem Salzwasser nach der Packungsanleitung garen. Gleichzeitig 3 kräftige Schuss Öl in einer großen Pfanne erhitzen und den Knoblauch mit dem oder den Chilis darin anschwitzen. Wenn der Knoblauch beginnt, Farbe anzunehmen, kommen die Garnelen dazu und werden 1 Minute angebraten. Anschließend den Weißwein mit dem Tomatenmark oder -püree einrühren und einige Minuten köcheln lassen. Sobald die Spaghetti al dente sind, abseihen – dabei etwas von dem Kochwasser auffangen – und mit der Sauce vermischen. Den Zitronensaft, die Hälfte des Rucolas und, falls Sie die Sauce etwas flüssiger wünschen, ein wenig Kochwasser untermischen. Abschmecken und auf einzelnen Tellern anrichten. Vor dem Servieren die Zitronenschale und den restlichen Rucola darüberstreuen.
